Recipe: Individual Watermelon Feta Salad Wedges


Summertime means getting to enjoy watermelons at their seasonal peak and this past weekend we cut into our first seedless treat of the season! Tim's the main point for most things food in our relationship, so he was in charge of the majority of our weekend party menu. That being said, I was excited to put together these individual watermelon feta wedges as part of the larger spread.


I've always loved the salty and sweet flavor combination of watermelon salads, and making these individual wedges instead of cubing up the melon and mixing everything in a bowl to serve turned out to be a hit.

 

Half a watermelon produced enough wedges to make about 25, so we were left with the other half to cut from and enjoy this week!

Ingredients:
  • 1/2 seedless watermelon, cut into wedges
  • Crumbled feta cheese
  • Chopped fresh mint leaves (we used fresh mint from the garden)
  • Balsamic vinegar (to drizzle)
Cut 1/2 watermelon into individual wedges and arrange on serving platter. Top each wedge with a healthy spoonful of crumbled feta cheese, followed by garnishes of the chopped mint leaves. At this point you can return platter to refrigerator to chill and store until ready to serve (since we can all agree watermelon tastes best when it's icy cold). Just before serving, drizzle balsamic vinegar across the tops of the wedges and enjoy.


This is such a simple summertime recipe, perfect for picking up and eating with your hands. Again, the saltiness of the feta paired with the sweet flavor of the watermelon seems like a contradiction, but is such a winning combination — you've gotta try it if you haven't! Even some of the younger ones in our crowd determined these to be a delicious treat.
