Recipe Roundup: What to Do with Those Tomatoes

Holy Moly, tomatoes are in season, that's for sure! If you're like us, right about now you're drowning in a sea of tomatoes and frantically searching for ways to prepare them while they taste their best. Today we wanted to round up a few recipes that have made appearances in our kitchen this tomato season to get some ideas going!

1. Let's get those meals started off right with a simple appetizer — roasted tomato bruschetta will do just the trick.

Toasted baguette slices, olive oil, ricotta cheese, thinly sliced prosciutto, roasted tomatoes, topped with fresh thyme and basil. Find the full recipe with step by step instructions for building these easy but impressive appetizers in one of Tim's latest guest posts for Lot18.

2. Who doesn't like a classic BLT in the middle of the summer?

Thick slices of fresh tomatoes, fresh greens, paired with layers of thick-cut bacon and a healthy spread of mayo — oh yes. Find Tim's recipe for a kicked up version of BLT's in one of his latest guest posts for Lot18.

3. If you're into making a simple tomato sauce, Eggplant Parmesan just might be a good dish for you.

Even if you're not into making your own sauce, this simple recipe for eggplant parm is sure to win over your stomach — it sure has been winning ours over since this is one of those recipes where the leftovers taste even better than the original. Full recipe on E.A.T.

4. How about some good old homemade hot salsa? Incorporate tomatoes or do what Tim did and use tomatillos (still related to the tomato family) to whip up a light seasonal snack.

  1. Holy moley! Bruschetta is something that seems so simple, but I've never made myself... Tomatoes in season seems to be a perfect excuse :) That heirloom tomato looks unreal... yum!
