Watermelon Mint Cocktail Recipe


In honor of National Watermelon Day, we couldn't help but share this super simple recipe for one of our favorite summer spirits — a refreshing watermelon mint cocktail.

Ingredients:
  • Watermelon
  • Prosecco
  • Fresh sprigs of mint

First we'll make watermelon juice and the little melon stars. Quarter a watermelon and cut out large chunks:


Reserve one or two very thinly cut slices to make fun watermelon shapes with cookie cutters — these make such a fun addition and garnish for the cocktail. They'd also just be a fun treat for kids on their own:


To make the watermelon juice, pulse chunks of melon in food processor, blender or with an immersion blender, then pour through fine sieve into container to reserve the juice:


Snip a few sprigs of fresh mint from the garden, pull the bottle of Prosecco out from chilling in the fridge and you're practically all set.


We've been snipping away from the mint plant that's been growing so nicely from the cutting we rooted back in the spring:


Start by dropping a small piece or shapes of watermelon into the bottom of your glass:


Fill bottom of glass with fresh watermelon juice — how much is up to you. The more you add, the more watermelon flavor will come through at the end:


Pour Prosecco over the watermelon juice, careful to go slowly or it will spill over:


Going slowly will also help you achieve that nice ombre effect that helps this cocktail look so appealing:


Finish with a full sprig of mint and another slice of watermelon as a garnish. You can make a small slice in the little watermelon shape you make to help it grab onto the edge of the glass:



To make a virgin version of this drink, you could use sparkling water or lemonade in place of the Prosecco – the result is just as bright and flavorful.
