However the fruit/herb addition is the hmmm factor, I would recommend you check for mold bi-weekly. Rosemary oil is an anti-bacterial so it may help inhibit the mold growth which is a natural by-product of the fermentation of the fruit and sugar. If you are canning the syrup there will be no need for refrigeration and will last for years unopened!
