My only variations were that I cooked the lentils in coconut milk and diced up the squash to stir in with the lentils. Sublime, extremely filling and inexpensive to boot; I'll be eating off this for two days at least!Aikonoreply@blogger.comtag:blogger.com,1999:blog-6557891584261110923.post-34402299327466104652014-10-09T16:37:44.662-04:002014-10-09T16:37:44.662-04:00So happy you enjoyed the recipe! So happy you enjoyed the recipe!17aparthttps://www.blogger.com/profile/18176955042705963326noreply@blogger.comtag:blogger.com,1999:blog-6557891584261110923.post-83442612321138803012014-10-09T15:17:19.607-04:002014-10-09T15:17:19.607-04:00tried and approved. Next time however, I will not serve it in the pumpkin shell, but roast, dice and mix the pumpkin in with the lentils. Also, instead of vegetable broth I used orange juice and that blended perfectly with the curry flavorwise...jutt@https://www.blogger.com/profile/12800896500817913008noreply@blogger.comtag:blogger.com,1999:blog-6557891584261110923.post-33074352434927768102014-10-06T07:55:03.325-04:002014-10-06T07:55:03.325-04:00So happy to hear this! Used unrefined coconut oil instead of olive because I wanted that touch of coconut flavor, and green lentils instead of red because they are what I had on hand. The flavors were on point. It isn't that far of a leap from mujaddara, one of our favorite meatless weeknight meals, to this, though I couldn't help but think that sausage would be an amazing addition if I were feeding carnivores. Will be serving this to some vegetarian friends in the very near future, following a first course of cauliflower soup. High fives all around.
