Also, they are more than kinda wonderful cut into uniform sized chunks and tossed with olive oil, salt and cumin... roast at 400, tossing every 15 minutes until you can't stand it and are afraid they will burn. Great instead of croutons on salad, with other roasted veggies like onions and red bell peppers as a side, or with sausage and baked apples as a hearty main dish.
