Beach Eats: Pimento Cheese Wars

Saying that Tim and I are big fans of pimento cheese might be a bit of an understatement. Tim makes a tried and true version we love and you might recall my favorite dish from last year's Broad Appetit being the fried pimento cheese fritters. Related — we were bummed to miss this year's Broad Appetit, but were booking it to the beach for our honeymoon instead.


While honeymooning, we picked up a tub of pimento cheese spread during our first big trip to the market and all I can say is, our snack creations seemed to get crazier and crazier, each outdoing the last. Things started out rather tame with a healthy dollap of pimento cheese on a wide, thin cracker...

Today we're sharing the recipe for one of the dinner spreads I made that turned out to be one of our favorites from the week — roasted vegetables, scallops and wahoo steak to share.

Bridal Luncheon & Rehearsal Dinner Place Settings

Last Friday before the wedding was filled with fun wedding prep events  — my mother hosted a bridal luncheon at the Virginia Museum of Fine Art's Amuse Restaurant and we enjoyed dinner with the wedding party after the rehearsal at Azzurro, the Italian restaurant where Tim and I first met.

Hitched! 17 Apart Wedding Preview


We made it! Tim and I are officially married as of Saturday and are already relaxing with Basil in a cozy remote beach cottage nestled in Hatteras. We knew we'd have limited internet access while here (which helps force us unplug), and are actually checking in via mobile hotspot — thank you iPhone! It's been fun seeing all the candid wedding photos shared across our Facebook feeds taken from all of our friends and family over the past couple of days — it really is so interesting to get to see a look at the wedding through all the different angles and points of view.
